Tender pasta shells filled with a creamy spinach and ricotta mixture, baked in a robust marinara sauce with savory ground turkey and melted mozzarella.
INGREDIENTS
2 unit jumbo pasta shells
4 oz ground turkey
0.5 cup part-skim ricotta cheese
1 cup baby spinach
0.5 cup marinara sauce
0.25 oz shredded mozzarella cheese
0 tsp olive oil
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp garlic powder
0.25 tsp dried oregano
PREPARATION
Preheat your oven to 375°F and lightly grease a small oven-safe baking dish.
Cook the jumbo pasta shells in a large pot of boiling salted water until al dente, then drain and set aside to cool.
In a skillet over medium heat, sauté the ground turkey in olive oil until browned and cooked through.
Stir the marinara sauce into the cooked turkey and let it simmer on low for 2-3 minutes.
In a medium mixing bowl, combine the part-skim ricotta, finely chopped baby spinach, garlic powder, dried oregano, sea salt, and black pepper.
Spread the turkey and marinara mixture into the bottom of your prepared baking dish.
Stuff each cooked pasta shell generously with the spinach and ricotta mixture and place them on top of the sauce.
Sprinkle the shredded mozzarella over the shells and bake for 15 minutes until the cheese is melted and the sauce is bubbly.
