Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served over garlic cauliflower mash and steamed asparagus, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Asparagus Spears
1 tbsp Extra Virgin Olive Oil
2 Garlic Cloves, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, season the salmon fillet with sea salt and black pepper on both sides.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and flaky.
Steam the asparagus spears for 3-5 minutes until bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl, add the minced garlic, the remaining olive oil, and a pinch of salt, then mash until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve alongside the steamed asparagus.
