Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a bed of creamy cauliflower mash with garlic-sautéed green beans and a bright, zesty lemon finish.
INGREDIENTS
8.5 oz Wild Atlantic Salmon
1 cup Green Beans
1.5 cups Cauliflower florets
1 tsp Olive Oil
1 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a food processor, add the Greek yogurt and a pinch of salt, and blend until smooth and creamy.
While the cauliflower steams, heat half of the olive oil in a skillet over medium heat and sauté the green beans with minced garlic for 5-7 minutes until crisp-tender.
Season the salmon fillet with salt and pepper.
In a separate non-stick skillet, heat the remaining olive oil over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
Plate the cauliflower mash first, top with the seared salmon, and serve the garlic green beans on the side with a squeeze of fresh lemon.
