Cajun Shrimp with Creamy Grits
Sautéed Cajun-spiced shrimp served over a bed of velvety, stone-ground grits enriched with a touch of Greek yogurt for a creamy finish.
INGREDIENTS
8 oz raw shrimp
0.25 cup dry stone-ground grits
1 tsp ghee
0.5 cup red bell pepper
0.25 cup yellow onion
2 cloves garlic
2 tbsp plain Greek yogurt
1 tsp Cajun seasoning
0.13 tsp sea salt
0.13 tsp black pepper
1 tbsp fresh parsley
0.5 whole lemon
0.25 cup low-sodium chicken broth
PREPARATION
Bring 1 cup of water and a pinch of salt to a boil in a small saucepan.
Whisk in the grits, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
While grits cook, heat ghee in a large skillet over medium-high heat.
Add the diced bell pepper and onion, sautéing for 3-4 minutes until softened and fragrant.
Toss the shrimp with Cajun seasoning, salt, and pepper, then add to the skillet with the garlic.
Sear the shrimp for 2 minutes per side until pink and opaque, then deglaze with chicken broth and lemon juice.
Once the grits are done, remove from heat and stir in the Greek yogurt until smooth and velvety.
Bowl the creamy grits, top with the Cajun shrimp and pan sauce, and garnish with fresh parsley.
