7 oz Prawns
1.25 oz Whole wheat spaghetti
2 tsp Extra virgin olive oil
3 cloves Garlic
2 cups Fresh baby spinach
1 tbsp Fresh lemon juice
0.25 tsp Red pepper flakes
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package directions until al dente.
While the pasta cooks, peel and mince the garlic cloves and finely chop the fresh parsley.
Heat the extra virgin olive oil in a large skillet over medium heat, then add the minced garlic and red pepper flakes, sautéing until fragrant but not browned.
Increase the heat slightly and add the prawns to the skillet, seasoning with sea salt and black pepper, and cook for 2-3 minutes until they turn pink and opaque.
Add the fresh baby spinach to the skillet and toss gently until the leaves are just wilted.
Drain the spaghetti, reserving a splash of pasta water, and add the noodles directly into the skillet with the prawns and spinach.
Pour in the fresh lemon juice and reserved pasta water, tossing everything together until the pasta is glossy and well-coated.
Garnish with fresh parsley before serving warm.
