Garlic Herb Steak with Roasted Sweet Potatoes
Pan-seared sirloin steaks basted with fragrant garlic and herbs, served with tender roasted sweet potatoes and crisp broccoli for a vibrant, nutrient-dense meal.
INGREDIENTS
5.25 oz Top sirloin steak
0.5 medium Sweet potatoes
0.25 tbsp Olive oil
0.25 tbsp Ghee
1 cloves Garlic
1 tbsp Fresh rosemary
1 tbsp Fresh thyme
1 tsp Sea salt
0.5 tsp Black pepper
1 cups Broccoli florets
PREPARATION
Preheat oven to 400°F and line a large baking sheet with parchment paper.
Peel and cube the sweet potatoes into 1-inch pieces, toss with olive oil and half of the sea salt, and roast for 25 minutes until tender.
Season the sirloin steaks evenly on both sides with the remaining sea salt and black pepper.
Heat a large cast-iron skillet over medium-high heat and sear the steaks for 4 to 5 minutes per side for medium-rare.
Reduce heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the skillet, spooning the melted herb butter over the steaks for 2 minutes.
While the steak rests, steam the broccoli florets in a steamer basket for 5 minutes until they are bright green and fork-tender.
Slice the rested steak against the grain and serve alongside the roasted sweet potatoes and steamed broccoli.
