Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Scrub the russet potato thoroughly, prick the skin several times with a fork, and rub with 0.5 tsp of olive oil and a pinch of sea salt.
Place the potato on the baking sheet and bake for 45 to 60 minutes until the skin is crispy and the center is tender when pierced with a knife.
While the potato is roasting, heat the remaining 0.5 tsp of olive oil in a non-stick skillet over medium heat.
Add the ground turkey to the skillet along with the garlic powder, remaining sea salt, and black pepper, breaking the meat apart with a spatula until fully browned.
Steam the broccoli florets in a steamer basket over boiling water for about 5 minutes until they are bright green and tender-crisp.
Once the potato is finished, slice it open lengthwise and gently fluff the interior with a fork.
Stuff the potato with the steamed broccoli and cooked ground turkey, then sprinkle the shredded cheddar cheese over the top.
Return the stuffed potato to the oven for 2 to 3 minutes until the cheese is completely melted and bubbly.
Remove from the oven and top with the Greek yogurt and freshly chopped chives before serving hot.
