Classic Garlic Parmesan Pasta
Pan-seared chicken breast and tender whole-wheat pasta tossed in a fragrant, golden garlic oil and finished with a dusting of sharp parmesan.
INGREDIENTS
4.5 oz Chicken breast
1.5 oz Whole wheat pasta
2 tsp Extra virgin olive oil
2 tbsp Parmesan cheese
3 cloves Garlic
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
0.13 tsp Red pepper flakes
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
While the pasta cooks, season the chicken breast with half of the sea salt and black pepper.
Heat a skillet over medium-high heat with half of the olive oil and sear the chicken until golden and cooked through, then set aside to rest and slice into strips.
In the same skillet, reduce heat to medium and add the remaining olive oil along with the minced garlic and red pepper flakes, sautéing until the garlic is fragrant and lightly golden.
Reserve a splash of pasta water, then drain the pasta and add it directly to the skillet with the garlic oil.
Toss the pasta with the sliced chicken, grated parmesan, fresh parsley, and the remaining salt and pepper, adding a bit of pasta water if needed to create a light sauce.
