Preheat your oven to 400°F (200°C).
Heat the olive oil in a medium oven-safe skillet over medium heat.
Add the diced yellow onion and minced garlic, sautéing for 3 minutes until softened and fragrant.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon and cooking until fully browned.
Stir in the cherry tomatoes, tomato puree, ground cumin, smoked paprika, sea salt, and black pepper.
Simmer the sauce for 5-7 minutes, allowing the cherry tomatoes to soften and burst slightly.
Use the back of a spoon to create two small wells in the sauce and carefully crack one egg into each well.
Transfer the skillet to the oven and bake for 8-10 minutes, or until the egg whites are opaque and set but the yolks are still soft.
Remove from the oven and garnish with crumbled feta cheese and chopped fresh parsley before serving.
