Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over creamy garlic-infused cauliflower mash with a side of snappy blistered green beans.
INGREDIENTS
7 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Ghee
2 tsp Olive Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until they are very tender, then mash them thoroughly with the ghee and one clove of minced garlic until creamy.
Season the salmon fillet with a pinch of salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until cooked through, then remove from the pan.
Add the green beans and the remaining minced garlic to the same skillet.
Sauté the green beans for about 5 minutes until they are tender and show slight blister marks.
Plate the salmon over the cauliflower mash with the green beans on the side.
