PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Dice the red potatoes into small cubes and toss them on the baking sheet with half of the avocado oil and a pinch of sea salt.
Roast the potatoes for 15 minutes.
Move the potatoes to one side of the tray, add the asparagus spears to the other side, drizzle with the remaining avocado oil, and roast for an additional 10 minutes.
