Pan-Seared Steak with Garlic Herb Butter
Grass-fed sirloin steak pan-seared to a succulent finish and topped with a fragrant garlic-herb ghee, served alongside crisp roasted asparagus.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Ghee
1 clove Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
1 cup Asparagus spears
1 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with a paper towel and season both sides generously with sea salt and black pepper.
Finely mince the garlic clove and chop the fresh rosemary and thyme leaves.
Heat the avocado oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3 to 4 minutes per side for a medium-rare finish.
Remove the steak from the pan and let it rest on a cutting board for 5 minutes to lock in the juices.
In the same skillet, reduce the heat to medium and add the ghee, minced garlic, and fresh herbs.
Add the asparagus to the pan and sauté in the herb ghee for 4 to 5 minutes until tender-crisp and bright green.
Slice the steak against the grain and serve immediately with the asparagus and a drizzle of the remaining garlic-herb ghee.
