Add the chicken to the skillet and sauté until golden brown and cooked through, approximately 5-6 minutes, then remove and set aside.
In the same skillet, add the diced white onion, minced garlic, and grated ginger, sautéing until fragrant and the onion is translucent.
Stir in the frozen peas and carrots and cook for 2-3 minutes until they are tender and heated through.
Push the vegetable mixture to the sides of the skillet and crack the egg into the center, scrambling it until just set.
Return the cooked chicken to the skillet along with the jasmine rice and tamari.
Toss all ingredients together for 2 minutes over high heat until the rice is slightly crispy and everything is well incorporated.
Garnish with sliced green onions and serve immediately.
