Spread the tofu in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
While the tofu bakes, heat a large non-stick skillet or wok over medium-high heat and add the sesame oil.
Add the broccoli florets and a splash of water, covering the pan for 2 minutes to steam-soften the vegetables.
Remove the lid, add the edamame, minced ginger, and garlic, and stir-fry for 3-4 minutes until the broccoli is tender-crisp.
Whisk the tamari sauce with a teaspoon of water and pour it over the vegetables, stirring to coat.
Add the crispy baked tofu to the skillet and toss everything together for 1 minute before serving.
