Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Ghee
1 clove Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket until they are bright green and crisp-tender.
While vegetables steam, pat the salmon dry with a paper towel and season both sides with sea salt and black pepper.
Heat the ghee in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a blender or food processor and pulse until smooth and creamy, adding a splash of water if needed.
Plate the cauliflower mash, top with the seared salmon, and serve with the steamed asparagus and a fresh lemon wedge.
