Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over nutty brown rice with crisp-tender garlic green beans, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
4.8 oz Salmon Fillet
1 cup cooked Brown Rice
1.5 cups Green Beans
0.75 tbsp Extra Virgin Olive Oil
2 cloves Garlic
0.5 tsp Lemon Juice
PREPARATION
Cook the brown rice according to package instructions until tender and fluffy.
Season the salmon fillet on both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crisp and golden.
Carefully flip the salmon and cook for another 3 to 4 minutes until the fish flakes easily with a fork.
In a separate skillet, heat the remaining olive oil over medium heat and add the minced garlic.
Add the green beans to the skillet with a tablespoon of water and cover with a lid to steam for 3 minutes.
Remove the lid and sauté the beans for 2 more minutes until the water evaporates and they are crisp-tender.
Serve the seared salmon over the brown rice with the garlic green beans and a fresh squeeze of lemon juice.
