Pan-Seared Chicken with Roasted Vegetables
Pan-seared chicken breast seasoned with aromatic herbs served alongside a colorful medley of oven-roasted broccoli and carrots for a satisfyingly crisp finish.
INGREDIENTS
6 oz Chicken breast
1 tbsp Extra virgin olive oil
1 cup Broccoli florets
0.5 cup Carrots
0.5 cup Bell pepper
0.5 tsp Garlic powder
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the broccoli florets, sliced carrots, and chopped bell peppers on the baking sheet.
Drizzle the vegetables with half of the olive oil and season with a pinch of the sea salt and black pepper.
Roast the vegetables in the oven for 15 to 20 minutes until they are tender and slightly caramelized.
While the vegetables roast, season the chicken breast evenly with garlic powder, dried oregano, and the remaining salt and pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear for 6 to 7 minutes per side until the exterior is golden brown and the internal temperature reaches 165°F.
Remove the chicken from the heat and let it rest for 3 minutes before serving alongside the roasted vegetable medley.
