Pan-Seared Steak Quesadillas
Pan-seared strips of lean top sirloin and crisp bell peppers folded into a toasted whole wheat tortilla with melted sharp cheddar for a satisfying, savory bite.
INGREDIENTS
5 oz Top sirloin steak
1 medium Whole wheat tortilla
0.5 oz Sharp cheddar cheese
0.25 cup Red bell pepper
0.25 cup Yellow onion
0.5 tsp Extra virgin olive oil
0.25 tsp Chili powder
0.25 tsp Cumin
0.13 tsp Sea salt
0.13 tsp Black pepper
PREPARATION
Slice the steak into thin strips and toss with chili powder, cumin, salt, and pepper.
Thinly slice the bell peppers and onions into long strips.
Heat half the olive oil in a skillet over medium-high heat and sear steak until browned, then remove from pan.
Add the remaining oil to the same skillet and sauté peppers and onions until softened and slightly charred.
Wipe the skillet clean, place the tortilla in the pan, and sprinkle half the cheese on one half of the tortilla.
Layer the seared steak and sautéed veggies over the cheese, add the remaining cheese, and fold the tortilla.
Press down with a spatula and cook for 2 minutes per side until the tortilla is golden and the cheese is melted.
