Seared Salmon with Roasted Asparagus and Cauliflower Mash
Pan-seared salmon served over a bed of creamy cauliflower mash and tender roasted asparagus, finished with a bright squeeze of fresh lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower Florets
100g Asparagus spears
1 tsp Avocado Oil
2 tbsp Nonfat Greek Yogurt
Sea salt and black pepper to taste
Fresh lemon wedges
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the asparagus spears with half of the avocado oil, salt, and pepper, then roast for 12 to 15 minutes until tender.
Steam the cauliflower florets in a steamer basket over boiling water for 10 minutes or until very soft.
Transfer the steamed cauliflower to a blender or food processor with the Greek yogurt and a pinch of salt, blending until completely smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy, then flip and cook for another 2 to 3 minutes.
Spoon the cauliflower mash onto a plate, top with the seared salmon and roasted asparagus, and serve with a fresh lemon wedge.
