PREPARATION

Heat ghee in a large skillet over medium-high heat and sear the chicken until golden brown on all sides, then remove and set aside.
In the same skillet, sauté the diced onion, garlic, and ginger until the onions are translucent and fragrant.
Stir in the tomato puree, remaining spices, and coconut milk, bringing the mixture to a gentle simmer.
Add the seared chicken back into the sauce and cook for 8-10 minutes until the chicken is cooked through and the sauce has thickened.
