Roasted Garlic Herb Potatoes with Lean Chicken
Oven-roasted chicken and crispy garlic-herb potatoes served over a bed of wilted spinach for a nourishing and fragrant meal.
INGREDIENTS
5 oz Chicken breast
1.5 medium Yukon Gold potatoes
1 tsp Extra virgin olive oil
2 cloves Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Fresh spinach
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash the Yukon Gold potatoes and dice them into uniform 1/2-inch cubes for even cooking.
Mince the garlic cloves finely and place them in a large mixing bowl with the potato cubes.
Add the olive oil, rosemary, thyme, sea salt, and black pepper to the bowl, tossing until the potatoes are well coated.
Spread the potatoes in a single layer on one side of the baking sheet.
Place the chicken breast on the other side of the sheet, seasoning it lightly with a pinch of salt and pepper.
Roast in the oven for 25 to 30 minutes, or until the potatoes are crispy and the chicken reaches an internal temperature of 165°F.
Place the fresh spinach on a plate and top with the hot chicken and potatoes to naturally wilt the greens before serving.
