Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon served over a velvety cauliflower mash with crisp-tender green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6.7 oz Wild Atlantic Salmon fillet
2.5 cups Cauliflower florets
1.25 cups Fresh green beans
0.8 tbsp Ghee
Pinch of Sea salt and black pepper
1/2 Fresh lemon
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are completely fork-tender, about 10-12 minutes.
Transfer the steamed cauliflower to a high-speed blender or food processor with half of the ghee and a pinch of salt, then blend until smooth and velvety.
Steam the green beans in the same steamer basket for 4-5 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat with the remaining ghee.
Place the salmon in the hot skillet skin-side down and sear for 4 minutes until the skin is crispy, then flip and cook for another 3 minutes until just opaque.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
