Add the chicken thighs to the pot and sear for two minutes on each side to develop flavor.
Stir in the dry brown rice and turmeric, coating the grains in the oil and aromatics.
Pour in the chicken broth and bring the mixture to a rolling boil.
Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 45 to 50 minutes until the rice is very soft and the liquid has thickened.
Remove the chicken thighs from the pot, shred them using two forks, and stir the meat back into the porridge.
Season the porridge with fish sauce, sea salt, and black pepper to taste.
Garnish with sliced green onions and serve hot in a deep bowl.
