Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served alongside fluffy mashed sweet potatoes and green beans sautéed with garlic, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon fillet
120g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Place the cubed sweet potato in a pot of boiling water and cook until tender, about 10-12 minutes.
While potatoes cook, heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon with a pinch of sea salt and sear for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
In a separate small pan, heat the remaining olive oil and sauté the green beans and minced garlic for 5-6 minutes until tender-crisp.
Drain the sweet potatoes and mash them until smooth, adding a splash of water or unsweetened almond milk if needed for consistency.
Plate the salmon alongside the sweet potato mash and garlic green beans, drizzling the lemon juice over the fish before serving.
