Green Chile Beef Enchiladas
Sautéed lean beef and aromatic spices layered between corn tortillas and smothered in a vibrant, smoky New Mexico green chile sauce.
INGREDIENTS
5.5 oz Ground beef (93% lean)
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Ground cumin
0.25 tsp Sea salt
0.25 tsp Black pepper
2 medium Corn tortillas
0.5 cup Roasted green chiles
0.25 cup Beef bone broth
2 tbsp Plain Greek yogurt
0.5 oz Monterey Jack cheese
PREPARATION
Preheat your oven to 375°F (190°C).
In a non-stick skillet over medium-high heat, brown the ground beef with the diced yellow onion and minced garlic until the meat is fully cooked and the onions are translucent.
Stir in the ground cumin, sea salt, and black pepper to evenly season the beef mixture.
In a small blender or food processor, combine the roasted green chiles and beef bone broth, pulsing until you achieve a thick, slightly chunky sauce.
Spread a small spoonful of the green chile sauce over the bottom of a small individual-sized baking dish.
Place one corn tortilla on top of the sauce, then layer on half of the beef mixture and a tablespoon of Greek yogurt.
Add the second tortilla, the remaining beef, the rest of the green chile sauce, and the remaining tablespoon of Greek yogurt.
Sprinkle the shredded Monterey Jack cheese over the top and bake for 15 minutes, or until the cheese is melted and the sauce is bubbling.
