Steam the cauliflower florets in a pot with a steamer basket for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a food processor or bowl, add the ghee and a pinch of salt, and blend until smooth and creamy.
Trim the ends of the green beans and mince the garlic cloves.
Heat a small amount of water or a light spray of oil in a skillet over medium heat, add the green beans, and cook for 5 minutes until tender-crisp.
Stir the minced garlic into the green beans during the last minute of cooking, then remove from the pan and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the avocado oil in the same skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until the desired doneness is reached.
Plate the salmon alongside the garlic green beans and a generous portion of mashed cauliflower.
