PREPARATION
Pat the sirloin steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the extra virgin olive oil until shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or until it reaches your desired level of doneness.
Reduce the heat to medium and add the ghee, smashed garlic cloves, and fresh rosemary sprig to the pan.
