Add the tofu cubes to the baking sheet in a single layer, ensuring they are not touching the vegetables too closely.
Bake for 25 to 30 minutes, flipping the tofu and tossing the vegetables halfway through, until the tofu is golden and the vegetables are tender.
Drizzle the remaining tamari glaze over the roasted tofu and vegetables just before serving.
