Heat 1 teaspoon of olive oil in a large oven-safe skillet over medium-high heat.
Sear the pork chops for 2-3 minutes per side until a golden-brown crust forms, then temporarily remove them from the skillet.
In the same skillet, add the remaining teaspoon of olive oil, shredded cabbage, and thinly sliced apples.
Sauté the mixture for 3-4 minutes until the cabbage begins to wilt, then pour in the apple cider vinegar to deglaze the pan, scraping up any browned bits.
Nestle the pork chops back into the skillet on top of the cabbage and apple bed.
Transfer the skillet to the oven and roast for 8-10 minutes, or until the pork reaches an internal temperature of 145°F.
Remove from the oven and let the meat rest for 5 minutes before serving to ensure a succulent and juicy texture.
