Creamy Chicken Alfredo Pasta
Sautéed chicken breast and chickpea pasta tossed in a velvety Greek yogurt alfredo sauce with crisp-tender broccoli florets.
INGREDIENTS
4 oz Chicken breast
1.5 oz Chickpea pasta
0.25 cup Plain Greek yogurt
1 tbsp Grated parmesan cheese
1 tsp Extra virgin olive oil
1 cup Broccoli florets
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Bring a large pot of salted water to a boil and cook the chickpea pasta according to package directions until al dente.
Season the chicken breast with sea salt, black pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown and cooked through, about 5-7 minutes per side.
Remove chicken from the skillet and let it rest for a few minutes before slicing into bite-sized strips.
In the same skillet, add the minced garlic and broccoli florets with a splash of water, covering to steam for 3 minutes until vibrant green.
In a small bowl, whisk together the Greek yogurt and grated parmesan cheese with 2 tablespoons of the hot pasta water to create a smooth sauce.
Drain the pasta and add it to the skillet with the broccoli, then stir in the yogurt sauce and sliced chicken until everything is coated and creamy.
