Pan-Seared Sardines with White Beans
Crispy pan-seared sardines served over a bed of creamy white beans infused with aromatic garlic and bright lemon zest for a fresh finish.
INGREDIENTS
8 oz Sardines (canned in water, drained)
0.5 cup Cannellini beans
1 tsp Extra virgin olive oil
2 cloves Garlic
1 tbsp Fresh parsley
1 tsp Lemon zest
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.13 tsp Red pepper flakes
PREPARATION
Pat the drained sardines very dry with paper towels to ensure they get a crispy exterior when searing.
Heat the olive oil in a medium non-stick skillet over medium-high heat until shimmering.
Place the sardines in the pan and sear for 2-3 minutes per side until golden brown and fragrant, then carefully remove and set aside.
Reduce heat to medium and add the minced garlic to the remaining oil in the pan, sautéing for 30 seconds until aromatic.
Add the rinsed cannellini beans, lemon juice, sea salt, black pepper, and red pepper flakes to the skillet.
Stir the beans gently for 2 minutes until they are warmed through and have absorbed the flavors of the garlic and lemon.
Remove from heat and stir in the fresh chopped parsley and lemon zest.
Transfer the white bean mixture to a plate and top with the crispy seared sardines.
