Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon topped with a fragrant almond-herb crust, served alongside crisp-tender asparagus for a vibrant and nutrient-dense meal.
INGREDIENTS
7 oz Salmon fillet
1 tbsp Almond meal
1 tsp Dried parsley
1 tsp Dried chives
0.25 tsp Garlic powder
1 tsp Olive oil
1 cup Asparagus
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Apple cider vinegar
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, mix together the almond meal, dried parsley, dried chives, garlic powder, and half of the sea salt and black pepper.
Pat the salmon fillet dry with a paper towel, then brush the top with apple cider vinegar to help the crust adhere.
Press the almond-herb mixture firmly onto the top of the salmon fillet until evenly coated.
Trim the woody ends off the asparagus and toss the spears with olive oil and the remaining sea salt and black pepper directly on the baking sheet.
Place the crusted salmon on the baking sheet next to the asparagus and bake for 12 to 15 minutes until the salmon is opaque and the asparagus is tender.
