Slow Cooker Pork Carnitas Tacos
Slow-cooked pork shoulder rubbed with aromatic spices and citrus, served in warm corn tortillas with a zesty lime finish.
INGREDIENTS
6.5 oz Pork shoulder
0 tsp Avocado oil
0.25 cup Orange juice
1 tbsp Lime juice
1 tsp Ground cumin
1 tsp Dried oregano
0.5 tsp Chili powder
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 small Corn tortillas
2 tbsp Plain Greek yogurt
1 tbsp Red onion
1 tbsp Fresh cilantro
2 medium Radishes
PREPARATION
Combine the ground cumin, dried oregano, chili powder, garlic powder, sea salt, and black pepper in a small bowl, then rub the mixture evenly over the pork shoulder.
Heat the avocado oil in a skillet over medium-high heat and sear the pork until deeply browned on all sides to lock in flavor.
Transfer the seared pork to the slow cooker and pour in the orange juice and lime juice.
Cover and cook on low for 8 hours until the meat is incredibly tender and pulls apart easily with a fork.
Shred the pork with two forks, then spread the meat onto a baking sheet and broil for 5 minutes until the edges become golden and crispy.
Warm the corn tortillas in a dry skillet and fill them with the crispy carnitas, a dollop of Greek yogurt, diced red onion, fresh cilantro, and sliced radishes.
