Garlic Shrimp with Roasted Green Beans and Rice
Sautéed shrimp tossed in a vibrant garlic-lemon glaze served over fluffy jasmine rice with charred, oven-roasted green beans.
INGREDIENTS
8 oz shrimp
1.5 cup green beans
0.13 cup jasmine rice
0.25 tbsp extra virgin olive oil
3 clove garlic
1 tbsp lemon juice
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp red pepper flakes
1 tsp fresh parsley
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the trimmed green beans on the baking sheet with 0.5 tbsp of olive oil, half of the sea salt, and half of the black pepper.
Roast the green beans for 15-18 minutes until they are tender and show slight char marks.
While the beans roast, heat the remaining 0.5 tbsp of olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet and season with the remaining salt, pepper, and the red pepper flakes.
Sauté the shrimp for about 2 minutes per side until they turn pink and opaque.
Add the minced garlic to the skillet and cook for 30-60 seconds until fragrant, being careful not to burn it.
Remove the skillet from the heat and stir in the lemon juice and freshly chopped parsley to glaze the shrimp.
Fluff the pre-cooked jasmine rice and place it in a bowl.
Top the rice with the garlic shrimp and serve the roasted green beans on the side.
