Slow Cooker Herb Chicken and Vegetables
Tender chicken breast slow-cooked with earthy herbs, baby potatoes, and vibrant carrots in a savory bone broth for a comforting and wholesome meal.
INGREDIENTS
3 oz Chicken breast
1 cup Baby potatoes
1 cup Carrots
1 cup Green beans
0.5 cup Chicken bone broth
0.25 tbsp Extra virgin olive oil
1 tsp Dried rosemary
1 tsp Dried thyme
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Place the baby potatoes, sliced carrots, and trimmed green beans in the bottom of the slow cooker.
Drizzle the vegetables with the extra virgin olive oil and sprinkle with half of the rosemary, thyme, garlic powder, sea salt, and black pepper.
Lay the chicken breast on top of the vegetable layer.
Season the chicken evenly with the remaining dried herbs and spices.
Carefully pour the chicken bone broth around the sides of the chicken to avoid washing off the seasoning.
Cover the slow cooker and cook on the Low setting for 6 to 7 hours, or on the High setting for 3 to 4 hours, until the chicken is tender and cooked through.
Remove the chicken to slice or shred, then serve immediately with the softened vegetables and the flavorful cooking juices.
