While potatoes roast, place the turkey bacon in a cold non-stick skillet and turn the heat to medium, cooking until the bacon is crispy.
Remove the bacon from the pan, let it cool slightly, and chop it into bite-sized pieces.
In the same skillet, add the remaining avocado oil and the baby spinach, sautéing until just wilted.
Pour the liquid egg whites into the skillet with the spinach, stirring constantly over medium-low heat until the whites are fully set and fluffy.
Fold the crispy turkey bacon pieces into the egg white scramble.
Serve the scramble alongside the roasted sweet potatoes and top with fresh sliced avocado.
