PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil, a pinch of sea salt, and black pepper on the baking sheet.
Roast the broccoli for 15-20 minutes until the edges are golden and crisp-tender.
While broccoli roasts, pat the lamb chops dry with a paper towel and season both sides generously with salt, pepper, minced rosemary, and thyme.
