Bring the liquid to a boil, then immediately reduce the heat to low and cover the pot with a tight-fitting lid.
Simmer for 45 to 60 minutes, or until the beef is fork-tender and the root vegetables are soft.
Taste the broth and adjust seasoning if necessary, then garnish with freshly chopped cilantro before serving in a deep bowl.
