7 oz Salmon fillet
1 cup Asparagus
1 tbsp Olive oil
1 clove Garlic
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the tough woody ends off the asparagus and spread the spears in a single layer on the prepared baking sheet.
Drizzle 0.5 tbsp of olive oil over the asparagus and season with half of the sea salt and black pepper.
Roast the asparagus for 12 to 15 minutes until tender and slightly charred at the tips.
While the asparagus roasts, pat the salmon fillet dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for another 3 to 4 minutes.
During the last minute of cooking, add the minced garlic and a squeeze of fresh lemon juice to the pan, spooning the juices over the fish before serving.
