Seared Salmon with Roasted Asparagus and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash and tender roasted asparagus, finished with a bright and zesty lemon squeeze.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
150g Fresh Asparagus spears
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Fresh Lemon juice, salt, and pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Trim the woody ends off the asparagus and toss with half of the olive oil, salt, and pepper on a parchment-lined baking sheet.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
While asparagus roasts, steam the cauliflower florets until they are very soft, approximately 8-10 minutes.
Transfer the steamed cauliflower to a blender or food processor with the minced garlic and a pinch of salt, blending until completely smooth and creamy.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for about 4-5 minutes per side until the exterior is golden and the center is just cooked through.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the roasted asparagus with a fresh squeeze of lemon.
