PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat. Place the salmon in the pan and sear for 3-4 minutes per side until golden and cooked to your preference, then remove and set aside.
In the same skillet, add the sliced red bell pepper, minced ginger, and minced garlic. Sauté for 2 minutes until fragrant.
Stir in the red curry paste and cook for 1 minute to toast the spices, then pour in the full-fat coconut milk and lime juice.
