Uzbek Lamb Plov with Garbanzo Beans
Tender lamb and nutty chickpeas simmered with aromatic cumin and julienned carrots in this fragrant, golden-hued rice dish.
INGREDIENTS
5.5 oz lamb leg
0.5 cup chickpeas
2 tbsp basmati rice
1 medium carrot
0.5 medium yellow onion
1 tsp avocado oil
0.5 tsp cumin seeds
0.25 tsp ground coriander
0.25 tsp turmeric
1 head garlic
0.5 tsp sea salt
0.25 tsp black pepper
0.5 cup water
PREPARATION
Cut the lamb leg into 1-inch cubes and season with sea salt and black pepper.
Rinse the basmati rice in a fine-mesh sieve under cold water until the water runs completely clear to remove excess starch.
Heat avocado oil in a heavy-bottomed pot over medium-high heat and sear the lamb until browned on all sides.
Add the sliced onion and julienned carrots to the pot, sautéing until the vegetables are soft and slightly caramelized.
Stir in the cumin seeds, coriander, turmeric, and drained chickpeas to create the flavorful zirvak base.
Spread the rinsed rice in an even layer over the meat and vegetables without stirring the layers together.
Slice the top off the head of garlic to expose the cloves and nestle it into the center of the rice layer.
Gently pour water over the back of a spoon onto the rice, bring to a simmer, then cover and cook on low for 20 minutes.
