Peel and cube the sweet potato into 1/2-inch pieces.

Spread the potatoes in a single layer on the baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
While the potatoes roast, heat the remaining 0.25 tbsp of olive oil in a large skillet over medium-high heat.
Add the ground beef to the skillet, breaking it apart with a wooden spoon, and cook until browned and no longer pink.
Stir in the diced red onion and bell peppers, cooking for 4-5 minutes until the vegetables are softened.
Season the beef and vegetable mixture with garlic powder, the remaining 0.25 tsp of smoked paprika, sea salt, and black pepper.
Add the baby spinach to the skillet and stir for 1 minute until just wilted.
Transfer the beef and vegetable mixture to a bowl, top with the roasted sweet potatoes, and serve immediately.
