Heat the ghee in a large skillet over medium-high heat until melted and shimmering.
Add the king prawns to the skillet in a single layer and sear for 2 minutes per side until they are pink and opaque.
Lower the heat to medium and stir in the minced garlic, cooking for 30 seconds until fragrant but not browned.
Remove the skillet from the heat and stir in the lemon juice, remaining sea salt, black pepper, and fresh parsley to coat the prawns.
Divide the warm rice and peas onto a plate, arrange the roasted broccoli on the side, and top with the garlic butter prawns.
