Herb-Roasted Whole Chicken with Root Vegetables
Whole chicken oven-roasted until the skin is golden and crispy, served alongside tender, caramelized root vegetables infused with aromatic rosemary and thyme.
INGREDIENTS
7 oz whole chicken
0.25 medium carrots
0.25 medium parsnips
0.13 large red onion
1 clove garlic
0.25 tablespoon olive oil
0.5 tablespoon fresh rosemary
0.5 tablespoon fresh thyme
0.25 teaspoon sea salt
0.25 teaspoon black pepper
0.25 whole lemon
PREPARATION
Preheat your oven to 425°F (218°C).
Peel the carrots and parsnips, then chop them along with the red onion into 1-inch chunks.
Pat the chicken completely dry with paper towels to ensure a crispy skin.
Stuff the chicken cavity with the lemon half and smashed garlic cloves.
Place the chopped vegetables in a large roasting pan and toss with half of the olive oil, salt, and pepper.
Rub the remaining olive oil, rosemary, and thyme all over the chicken skin, then season with the remaining salt and pepper.
Place the chicken on a roasting rack set over the vegetables or directly on top of the vegetable bed.
Roast for 60 to 75 minutes, or until the thickest part of the thigh reaches an internal temperature of 165°F.
Remove from the oven and let the chicken rest for 10 minutes before carving to keep the meat juicy.
Serve 6 ounces of roasted chicken per person alongside half of the roasted root vegetables.
