Mix by hand until just incorporated, being careful not to over-mix which can make the meatloaf tough.
Shape the mixture into a uniform loaf and place it in the prepared baking dish.
In a small bowl, whisk together the tomato paste and balsamic vinegar to create the glaze.
Bake the loaf for 25 minutes, then remove from the oven and spread the tomato glaze evenly over the top.
Return the meatloaf to the oven for another 10-15 minutes or until the internal temperature reaches 160°F.
Let the meatloaf rest for at least 5 minutes before slicing into thick pieces to ensure it stays moist.
