Add the finely diced yellow onion and minced garlic, sautéing for 3 minutes until translucent.
Add the dry basmati rice to the saucepan and stir for 1 minute to lightly toast the grains.
Pour in the chicken broth and bring to a boil; then reduce heat to low, cover, and simmer for 15 minutes.
Remove the rice from the heat and let it sit, covered, for an additional 5 minutes to steam.
Fluff the rice with a fork and fold in the lemon juice, lemon zest, chopped parsley, and dill.
Slice the rested chicken breast and serve it immediately over the warm lemon herb pilaf.
