Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon with a crisp skin served over velvety cauliflower mash alongside tender garlic-scented green beans.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
1 tablespoon Nutritional Yeast
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a basket over boiling water for 10-12 minutes until very fork-tender.
Transfer the steamed cauliflower to a food processor or blender along with the nutritional yeast and a pinch of sea salt, then process until completely smooth and velvety.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until desired doneness is reached.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic with a splash of water, sautéing for 3-4 minutes until the beans are bright green and tender-crisp.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve the garlic green beans on the side.
