2 cups Cauliflower florets
1 cup Asparagus spears
2 tsp Ghee

PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add asparagus spears to the steamer during the last 4 minutes of cooking until bright green and tender-crisp.
While vegetables steam, pat the salmon dry with a paper towel and season with salt and pepper.
Heat ghee in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from heat.
Transfer steamed cauliflower to a bowl or food processor. Add Greek yogurt, minced garlic, and a pinch of salt.
Mash or pulse until the cauliflower reaches a smooth, creamy consistency.
