Garlic Herb Roasted Chicken
Oven-roasted chicken breast rubbed with aromatic garlic and earthy herbs, served with caramelized sweet potatoes and crisp-tender broccoli for a satisfying, clean meal.
INGREDIENTS
5.5 oz chicken breast
1 tbsp olive oil
2 cloves garlic
0.5 tsp dried rosemary
0.5 tsp dried thyme
0.25 tsp sea salt
0.25 tsp black pepper
1 medium sweet potato
1 cup broccoli florets
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Peel and dice the sweet potato into 1-inch cubes. Toss them on the baking sheet with 0.5 tbsp of olive oil and a pinch of salt and pepper.
Roast the sweet potatoes for 10 minutes to give them a head start.
While potatoes roast, mince the garlic and combine it in a small bowl with the remaining 0.5 tbsp olive oil, rosemary, thyme, salt, and pepper.
Pat the chicken breast dry and rub the garlic-herb mixture evenly over all sides.
Remove the baking sheet from the oven, slide the potatoes to one side, and place the chicken breast and broccoli florets on the other side.
Return the pan to the oven and roast for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
Let the chicken rest for 5 minutes before slicing to keep it juicy, then serve alongside the roasted vegetables.
